Cool Dude...
Connor had fun hanging out with Aunt Allison at a yard sale a few weeks ago. It was pretty sunny out, so we found this pair of sunglasses to help him deal with the brightness. Strangely enough, he didn't try to take them off his face at all. I think this was before he discovered all the amazing things he can do when he grabs stuff with his hands!

Have some leftover spaghetti sauce?
I've made this recipe twice now. Once quite awhile ago, and then again tonight. I'm going to make sure I add it to my list of recipes to use a few days after I've made spaghetti. I almost always make way too much spaghetti sauce. And it's nothing too fancy either. I just saute some veggies, brown some meat, throw in a jar of Classico sauce, and sometimes add another can of tomato sauce.
Anyway, on to what to do if you have a bit leftover!
Creamy Chicken Lasagna
3 skinless, boneless chicken breast halves
6 uncooked lasagna noodles
1 cube chicken bouillon
1/4 C. hot water
1 (8 oz) package cream cheese, softened
2 C. shredded mozzarella cheese
1 (26 oz) jar spaghetti sauce (this is obviously where I use my homemade sauce)
1. Place noodles in a 13x9 inch baking dish. Bring approx. 6 cups of water to a boil. Pour over noodles. Add 1/2 T. olive oil and let sit for 15 minutes. Separate noodles with a fork as needed.
2. Cut chicken into several pieces. Season with Everglades Seasoning (or whatever type of seasonings you like/have on hand). Heat a large skillet over medium-high heat. Add some olive oil. Cook chicken until browned on all sides and cooked through. Remove from pan and shred with 2 forks.
3. Heat oven to 350. Dissolve bouillon in hot water. In a large bowl, mix together the bouillon, chicken, cream cheese and 1 cup mozzarella.
4. Spread 1/3 of spaghetti sauce in the bottom of a 9-inch square baking pan. Cover with 1/2 chicken mixture and top with 3 lasagna noodles, repeat. Top with remaining sauce and remaining mozzarella cheese.
5. Cover with aluminum foil, sprayed with cooking spray to prevent sticking, and bake for 30 minutes. Remove foil and bake for an additional 15 minutes. Let stand for 10 minutes before serving.

More Random Pictures
It's Spiderman! Oh wait, it's Batman!
I'm so confused. When Sean was dressed up like this he told me he was too powerful with the Batman cape on AND the Spiderman mask. So he promptly took off the Spiderman mask and said, "I'm not too powerful anymore, mommy."

I think this would have worked better if the sun hadn't been in their eyes. I believe we were getting ready to go to church.
This is our hawk friend. He is a short-tailed hawk. He hangs around every now and then. I'm pretty sure I've seen him flying overhead recently.
Wasps
This might seem like an odd sort of post, but these are some amazing pictures that Damian took with the macro mode on our camera. He found this wasp nest several weeks ago on our back porch. A couple of days before this picture was taken, I had gone around the house and used an entire can of wasp killer and gotten several nests. It was odd, though, when I got to the back porch I saw several flying around but didn't see their nest. As you can see, Damian discovered where they had been hiding!

These days Reagan pretty much always has her nose in a book. This particular evening she was enjoying a Nancy Drew book. She's read 3 all the way through and parts of a couple others.
Tallahassee
We went to Tallahassee the weekend after New Year's to have Christmas with Debbie. The kids enjoyed staying at the hotel. They also loved the little town of Havana, and the general store we found there. There are also several really cool antique shops. It's a good thing we didn't have more time to shop!
Sean at the 'candy store'. It was really a little general store in Havana, FL, which is just north of Tallahassee.
